There are very few plants for which the stem, i.e. the leaf-bearing part of the root, is consumed.
We know asparagus and bamboo shoots, whose young stalks are delicious, leeks, whose “stem” is the stalk, spring onions and fennel, whose “bulb” is in fact just a deformed, swollen stalk.
I harvested and cooked my 1er onion. It was delicious. I’m delighted to have contributed to its development and its exquisite taste. And then there were lots more.
